Sauteed apples again this morning! Last night I chopped up a Royal Gala apple and threw it in a pan with a little butter, brown sugar, and cinnamon, and stirred in some raisins near the end of the cooking process. I let them cool down before stirring in a serving of 2% plain yogurt, then refrigerated overnight. This morning I made 1/3 cup oats in the micro and added it to the apple-yogurt mixture, and yuuummm what a delicious bowl of oats! They were just slightly warm from the heat of the oats and were perfect with a spoonful of almond butter.
I also made lunch last night too- I grilled tofu on the good ol' George Foreman and then diced it and tossed with the rest of my shredded cabbage (love this stuff!), some mustard, agave nectar, and dried cranberries. On the side I have baby carrots and some sweet little yellow tomatoes. These are so cute and (in my opinion) sweeter than the red variety.
Dinner is probably going to be on the run, unfortunately, I don't know if I'm going to have time to run back home before heading out to my second job. Busy busy day!
More news- I bought a little food scale yesterday! It comes equipped with a meat thermometer, which I love because now I can try roasting a whole chicken (something I've always wanted to do but been kind of scared to try). There are also a couple baking recipes which measure in weights for greater accuracy (like the NYTimes Chocolate Chip Cookie recipe!) which I am just dying to try :) I'm also going to use it sparingly for everyday eating- Mireille Guiliano (my girl from FWDGF) recommends using one to see what a real portion size is.
Since I've been working so much (and my job is seriously physical labour, I work in a housewears department, which means lots of box moving and arranging pretty things like dishes!) I haven't been able to get to the gym but I have been doing lots of moving while at work and also going for long walks. I met a friend last night and we walked through some gorgeous neighbourhoods. There were sooo many people eating outside and sharing bottles of wine and just enjoying the weather, walking around these houses put me in such a great mood!
